I once went to a local restaurant and ordered loaded potato skins for an appetizer with disappointing results.

The skins were very dry and cracked, clearly the work of a microwave in action, and the cheese was spongy; also, the microwave, I suspect.

The bacon bits were tiny and crunchy and did not seem fresh as advertised. I sent it back and thought to myself: " how difficult is it to make a loaded potato skin?" Or any type of potato dish, for that matter?

I was now on a quest to find the best and simplest potato recipes that existed, so I never had to suffer through another disappointing appetizer again! This cookbook is chock full of those recipes that I found easy, quick and delicious!
